Spinach, ugh…zucchini, ick…combine these incredibly healthy vegetables with chicken and apples and your little one will be asking for more. So, I am not a vegetable fan, I know that I need to eat my greens but I would rather eat delicious fruit than raw vegetables. I do not want to pass my bad eating habits onto my son; therefore, I look for ways to introduce healthy vegetables in well-balanced purees.
This puree is packed with calcium, protein, fiber, vitamin A, and iron with the added bonus that it’s delicious. In particular, the folate in spinach is good for the cardiovascular system, and magnesium helps lower high blood pressure. Studies also have shown that spinach helps maintain vigorous brain function, memory and mental clarity. I found this puree in The Little Foodie: Recipes for Babies and Toddlers with Taste.
Super Green Puree + Chicken is for 9+ months
½ chicken breast, uncooked
2 small zucchini, roughly chopped
2 apples, cored and chopped into quarters
2 cups trimmed, packed baby spinach
-Fill a medium saucepan with about 2 inches of water. Boil water
-Place the chicken breast in a steamer basket over the boiling water, and cover for 10 minutes.
-Flip the chicken, and add the zucchini, apples, and spinach on top of the chicken.
-Cook for an additional 10 minuets, the let cool
-Remove the chicken to check for doneness and then roughly chop.
-Place all ingredients into a blender or food processor, and puree until you reach your desired consistency.
